Pancakes for Dinner

Do you ever do breakfast for dinner?


Umm, my pancakes don't ever look like that!  More like this,


We often do a breakfast dinner when Bob is out of town.  It's an easy and quick meal, less expensive than grabbing something at the drive-thru and a little healthier too.  Pancakes definitely aren't health food, but I do feel better if it make them homemade.  At least I know what is going into the recipe and I can leave out the crazy chemicals and preservatives.  Here is a recipe that we have been using for a while.  I can double the recipe, dump it all in our Blendtec and we are ready to roll.

1 cup oats
1 cup best quality flour you have
1 tablespoon baking powder
1 teaspoon sea salt
1.5 cups non-dairy milk (almond, rice, soy, other)
2 eggs (preferably organic and from free-range birds)
1/4 cup extra-virgin olive oil (or coconut oil if you prefer fluffier pancakes)
More olive or coconut oil for the pan
2 tablespoons honey or other sweetener of your choice

Last night I threw a ripe banana into the Blendtec as well.  Then, just for fun, I added a few chocolate chips and some strawberries.

Here's a funny.  For some reason I texted Patty that we were having pancakes for dinner, turns out they were too.

Does anyone else do breakfast for dinner?

Yup! I just don't like cooking a big breakfast for breakfast. We usually need to be off doing something and there isn't the time. But, there's always more time at dinner! The kids like breakfast sandwiches with egg, cheese and bacon or ham on homemade biscuits or English muffins, pancakes, cubed melon and pineapple, homemade blueberry muffins, and juice. I don't cook ALL this at once! LOL

Breakfast sandwiches are a great idea! I have never come across a good biscuit recipe, mine never turn out.

LOVE breakfast for dinner! Great minds think alike too...I almost made pancakes for dinner last night :-) That is a great looking recipe for pancakes! My favorite is blueberry pancakes with fresh blueberries. YUMMY!

You bet! My husband is not a big breakfast dinner fan, but my kids and I love it! We have eggs or a Mexican burrito with veggies, beans, salsa sometimes too! I gotta throw in some meat when we do the pancake breakfast cuz the kids love syrup coating their sausage links!

Oh yes, we love breakfast for dinner...Kids call it Upside Down Day:-) One of my littles was just asking for it the other day so maybe we'll try your home made pancakes. Not surprising that you and Patty are on the same sheet of music:D

We do breakfast for dinner at least once a week. Most of the time it's some sort of eggs and potatoes type dish but we have gluten-free pancakes or waffles sometimes too. I don't really like the time they take to make though so I don't make them as often as I should. Maybe we'll have them one day this week. I will tell you that I almost never make pancakes for breakfast - too time consuming. If we have them, it's for dinner.

We do breakfast for dinner about once a week. I have yet to find a great recipe for pancakes. We use a gluten free organic brand that I like very much but I love to make things from scratch. I am going to try this for breakfast tomorrow morning!
