Healthy & Quick Breakfast Ideas

Breakfast is undoubtedly the most important meal of the day.  In the past I have always tried to have a sit down breakfast, waiting for everyone to be up and finished with their chores.  This year in an effort to get our mornings moving along a bit more, I’m letting the kids start eating when they are ready.  That means breakfast is a bit staggered throughout the morning, but it lets my early risers get up and eat and get started on their school day. 

I have been trying to come up with a few new breakfast ideas to add to our schedule, something besides cereal and oatmeal.  Although I love oatmeal and can eat it just about everyday, my kids get a bit tired of it.  And we no longer eat eggs, which we used to have a couple of times during the week.  I want breakfast to be hearty, healthy, fast and easy.  So far we have had good results with Banana Bread and Oatmeal breakfast cookies.  

Banana Bread Recipe {with Chocolate Chips!}

1 cup whole-wheat pastry flour {I use King Arthur’s Whole White Wheat Flour}
3/4 cup oat flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp sea salt
1 cup pureed ripe banana
1/2 cup maple syrup
1/2 cup plain unsweetened non-dairy milk
1 tsp pure vanilla extract
handful of non-dairy chocolate chips
Preheat oven to 350.  In a large bowl, mix dry ingredients.  In a separate bowl, combine mashed banana, maple syrup, milk, vanilla.  Add wet mixture to dry, and stir through until well combined.  Wipe a loaf pan with oil.  Pour batter into pan, sprinkle a few chocolate chips on top and bake for 43-48 minutes, until golden brown and toothpick comes out clean.  Let cool completely before slicing.

Even my picky eaters love this recipe.  I double the recipe and make two loaves.  I would encourage you to take some time to browse through Plant Powered Kitchen.  Don’t be put off by the word “vegan”, there are tons of yummy recipes to try and you don’t have to be vegan to enjoy them!
Oatmeal Breakfast Cookies

These are even easier to make and just as tasty!

2 mashed bananas
1/4 cup applesauce – unsweetened
1/2 tsp of vanilla
1/4 tsp cinnamon
1/4 tsp nutmeg
1/3 cup of raisins {I used cranberries}
2 cups of quick oats

Preheat oven to 350, lightly grease cookie sheet.  Combine all ingredients, drop onto cookie sheet.  Press down lightly, the cookies will not spread.  Bake for 15 minutes.

I also doubled this recipe and it lasted through two breakfast meals.


Add in some Shakeology, a piece of fruit, a non-dairy yogurt and my kids are good to go for a busy school morning.  Enjoy!

    This banana bread recipe is so timely. We just found out last week my youngest is allergic to egg, dairy and wheat. I have been very busy trying to recreate the way I cook my favorite recipes. I found a great one for pancakes – I’ll send it to you. I am going to try this today!

    I would love the pancake recipe, so would my kids! Thanks. I would highly recommend the Plant Powered Kitchen site, she has a ton of recipes, many kid friendly. I have her cookbook, Let Them Eat Vegan and that is good as well. Sorry to hear your daughter is allergic to those things :(

    Great recipes, Jen. I saw the banana bread recipe before and haven’t gotten around to trying it. I’ll add those cookies to my “to bake” list. Always love trying new things!
