Looking for a quick, healthy, easy, frugal crock pot meal? Crock pot Taco Soup fits the bill.
I use my crock pot on busy days when we are going to be out of the house, days when we will have a busy evening, and just plain old busy days!
Crock Pot Taco Soup
Ingredients:
Vegetable Stock – 4 cups
Canned Diced Tomatoes
Can of Corn
Black Beans – 2 cans
Taco Seasoning Packet
Small Can of Green Chilies
If you prefer, it would be easy to add a bag of meat crumbles or brown some ground beef before dumping everything in the crock.
Also, it’s very easy to adjust the seasonings to your liking, depending on how spicy your family prefers their food.
Heat on low for 6-8 hours
Serve with cheese, avocado, tomatoes, tortilla chips, sour cream, whatever it is your family enjoys.  I usually add a side of corn muffins or cornbread.

This is very similar to my Taco Soup, except I add a can of Refried Beans (or some homemade) which makes the soup creamy.
