You know how much I love super simple, easy dinners. Â This is one of my favorites. Â I like to put this on the rotation for Monday nights. Â Mondays always seems like particularly busy days, both around the house and for school.
Throw this concoction into the rice cooker in the afternoon and you are ready to go for dinner just a short time later. Â I purchased my rice cooker from Amazon. Â A rice cooker can be used for so much more than just rice. Â I have made rice pudding, quinoa, and oatmeal. Â I’m not one to purchase an appliance that serves just one purpose. Â My kitchen cupboard space is too limited for that.
So, here’s the recipe:
4 cups of brown rice {I use the cup that comes with the rice cooker}
7 cups of water {again I use the same cup} {Also great with veggie broth!}
1 can of black beans, rinsed
1 can of diced tomatoes (I use Fire Roasted Tomatoes)
1 cup of corn {more or less to taste – or use a can}
1 taco seasoning packet, or use your own spices
Start the rice cooker and dinner is done!
